POS setup - taxes

Is it possible to cancel just one tax when you initially set up two taxes? For example national and local tax but depending on different situations, just one of the taxes needs to be cancelled and other cases, both.

No it is not. But since you can have up to 9 different tax rates you can do this...

Tax rate #1 = Both taxes
Tax rate #2 = First tax only
Tax rate #3 = Second tax only

Now when you ring up an item that is taxed with the first rate only, when the program asks you for the price press [F7] to switch to the second tax rate.
