At the end of the day I do a total print out and an itemised sales report. The itemised report shows the sales OK, but is there a way that the dollar amounts for each item in the printout can be shown as either gross or net amounts, as at the moment I can only get net figures (ex tax)?
I've searched and can't find an option, but that doesn't mean it's not there...

It's not there. The program only keeps track of what you take in for the merchandise without tax.
